We love a summer fruit salad. They’re always super-tasty, packed with healthy nutrients, and refreshing on a hot day. But if you think they’re time-consuming to peel and chop, then think again…

 

In this article – we share an easy fruit salad recipe made from 3 seasonal summer ingredients. 

 

The thing about fruit salad is that it’s really versatile. You can enjoy it for breakfast, dessert, or a healthy snack.

 

It’s also a brilliant way of using up fruit that’s past its best. You know, the ones that are getting a little mushy or maybe even starting to fuzz.

 

Chucking them all in a fruit salad means your ingredients aren’t wasted – meaning your money goes further and there’s less for landfill. Sounds like a win/win. 

 

It started with a forgotten banana…

A case in point, the other week my boyfriend forgot a banana in his bag so it had gone black. Needless to say, it wasn’t particularly appetising.

 

We also had some juicy nectarines that were on the turn. And a few strawberries that were a little on the mushy side.

 

So, I whipped them up into a super-simple fruit salad. And it was surprisingly epic.

 

I hadn’t expected much, there were only 3 ingredients afterall. But they work perfectly together, to the point that you don’t need anything else.

 

It’s a simple recipe – everything got chopped straight into the tupperware. Nutrients can sometimes begin to degrade as soon as fruit is sliced so it’s important to store in an air-tight container asap.

This might seem like a weird thing to say, but how you chop the fruit matters. It needs to be in bite-sized pieces to make it easy to eat with a spoon. But having varied shapes also makes it look more appealing visually. 

 

  • Bananas – slice in half length-ways and then into small semicircles.
  • Nectarines – open them up in half like an avocado, then slice into segments, and chop those in half again.
  • Strawberries – remove their green hats and slice in half (or more times if they’re big strawberries).

 

Once it’s chopped and chilled, serve with a dollop of dairy-free yogurt for an indulgent summer dessert :)

Ingredients

  • 1 banana
  • 1 nectarine
  • 8 strawberries

Instructions

  1. Wash and peel the fruit (see tips below)
  2. Place into an airtight storage container immediately
  3. Chill before serving

And of course it goes without saying that you can blend these ingredients into a smoothie too…
